One problem with raw egg is the salmonella. It used to be just on the outside of the shell but in the past 20 years or so with all the antibiotics fed to the chickens they’ve become so resistant that now the salmonella is living inside the chicken’s ovaries and the bacteria is now inside the shell inside the egg. Only way to diagnosis infected chickens is to kill them and test the ovaries, thus no more eggs so they just let it go.
Salmonella dies at a low heat but cooking eggs is just good practice in case you should get an infected egg.
